Abstract

The development of functional beverages from indigenous fruits represents an important opportunity to combine nutritional improvement, food innovation, utilization of underused agricultural resources, and preservation of local food traditions. Indigenous and underutilized fruits frequently contain vitamins, minerals, dietary fibre, phenolic compounds, flavonoids, carotenoids, organic acids, and other phytochemicals that may contribute to antioxidant and other physiological functions. Recent research has demonstrated increasing interest in fruit-based functional beverages because beverages provide a convenient vehicle for delivering bioactive compounds and can also be formulated as non-dairy probiotic products. PubMed+1 The present study proposes the development and evaluation of functional beverages prepared from selected indigenous fruit ingredients. The research focuses on selecting suitable fruits, developing beverage formulations, determining their physicochemical and nutritional characteristics, evaluating antioxidant potential, and assessing consumer acceptability. The proposed product-development process includes raw-material selection, cleaning and preparation, juice or pulp extraction, formulation, pasteurization or other appropriate processing, packaging, storage, and quality evaluation. Important quality parameters include pH, total soluble solids, titratable acidity, vitamin C, total phenolic content, antioxidant activity, colour, and sensory attributes such as taste, aroma, appearance, mouthfeel, and overall acceptability. Indigenous fruit beverages may also be explored as carriers for probiotic cultures because recent reviews identify fruit juices as promising non-dairy matrices for probiotics, although microbial survival and beverage stability require careful optimization. ScienceDirect+1 The study is expected to identify a formulation with desirable nutritional, functional, physicochemical, and sensory properties. The research can contribute to value addition of indigenous fruits, reduction of post-harvest losses, diversification of functional food products, and development of affordable beverages based on locally available resources.
